Entertaining: Easy Appetizers – Wine Bar Nut Mix
Bartenders are smart. As soon as we belly up to the bar, they plop down a napkin and slide a bowl of nibbles our way. What could be more perfect during happy hour than a mix of nuts and crunchies flavored with some sugar and spice? That’s why I’ve included a sweet and savory nut mix in practically every cocktail menu I have ever served. This is one of my favorite versions. It’s a snap to make and addictively good – a satisfying nosh with a great glass (or two) of wine. Cheers!
Here’s what you’ll need:
- 2-1/2 cups mixed nuts
- 3 cups mixed crunchies (like rice or wheat cereal squares, mini pretzels, cheese crackers, mini pita chips)
- 4 tablespoons unsalted butter, melted
- 2 tablespoons maple syrup
- 2 tablespoons dark brown sugar
- 2 teaspoons Worcestershire sauce
- 1 teaspoon paprika
- 1/4 teaspoon kosher salt
- 1/8 teaspoon garlic powder
- Pinch ground red cayenne pepper
- 2 teaspoons fresh minced thyme or rosemary
Here’s how:
Preheat the oven to 325 degrees. Line a large rimmed baking sheet with parchment paper and set aside. In a large bowl, combine the nuts and assorted crunchies. In another bowl, whisk together the butter, maple syrup, brown sugar, Worcestershire, paprika, salt, garlic powder and cayenne. Drizzle over the nut mixture, tossing to evenly coat all the pieces.
Spread out in a single layer on the prepared pan and bake until lightly browned and fragrant, about 15 to 20 minutes. Sprinkle with the thyme or rosemary. Cool completely.
